Lion's Mane Mushroom (Hericium erinaceus) is an edible and medicinal mushroom belonging to the tooth fungus group.

A beautiful and unusual looking mushroom comprised of layers of cascading spines. It's now a rare find in the UK and is classed as an endangered species so shouldn't be picked if found in the wild.

This is a slow growing species with a superb sweet, mild flavour and a melt-in-the-mouth texture that gets compared to lobster.

Excellent fried in butter or oil, complementing many different dishes.

The Black Pearl King Oyster is a new oyster mushroom hybrid from Japan. It is the result of a cross between a European and an Asian Pleurotus ostreatus and grows big firm mushrooms.

Unlike other oyster mushrooms that are more fibrous towards the base the Black Pearl King Oyster has a beautiful firm texture all the way through meaning it can be cut into strips and disks and cooks evenly.

Similar texture to King Oysters with a delicious umami flavour.
